SOOVER
Designation of origin: Costa Toscana Rosso IGT
Grape variety: Sangiovese, Merlot, Syrah, Cabernet Franc, Petit Verdot, Cabernet Sauvignon
Label: The symbolism above the two OO of the SOOVER outlines an X with two bars running vertically. The X stands for the mix of the different grape varieties and in connection with the bars, a stylised wine bottle is depicted.
Vinification: Harvest by hand. An optical selection machine is used to select the grapes. Fermentation with indigenous yeast in steel tank. The wine is aged for 6 months in steel tanks. We then carry out bottling (without filtering).

A dark and concentrated ruby red. The bouquet is coherent with pronounced fruity notes of blackberry, cassis and plum, with a hint of chocolate and a delicate herbal note. On the palate, this wine is finely structured and reveals a lively freshness with fruit that is beautifully full and balanced. The minerality is well marked and pleasantly warm.
A wine that loves grilled meats, game and braised meats, but also pasta with meat sauce or porcini mushrooms. Not to forget the typical antipasti.
